Zucchini Bread

Ingredients

2 cups shredded zucchini with skins on

2 cups sugar

1 cup vegetable oil

3 eggs

1 tsp vanilla extract

3 cups all purpose flour

1/4 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 tsp ground cloves

1 tsp ginger

1 tsp cinnamon

1 cup chopped walnuts

Mix zucchini, sugar and add oil. Add eggs one at a time and mix well. Add vanilla. Mix dry ingredients together and add to wet ingredients. Add nuts. Pour into 2 greased loaf pans. Bake 325 degrees for 1 hour.
