Ingredients
Prepared pie dough
Filling:
3 Tbsp butter
Add 1 large onion, chopped
8 ounces spinach, chopped
1/4 pound mushrooms
Melt butter and add onion, spinach and mushrooms. Cook until onion is translucent. Place pie dough into pie pan. Sprinkle 2 cups grated swiss cheese over crust. Spread spinach mixture over cheese mixture.
Blend 1/4 cup fresh grated Parmesan cheese, 4 eggs, 2 cups half & half, 2 Tbsp flour, 1/4 tsp nutmeg, 1/4 tsp red pepper, 1/4 tsp white pepper, pinch of salt. Pour over spinach mixture.
Bake 1 hour at 400 degrees or until knife inserted in center comes out clean.
