Ingredients:
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/2 cup white sugar
- 1 teaspoon salt
- 3 teaspoons baking powder
- 1 egg
- 1 cup milk
- 1/3 cup vegetable oil
- 1/4 cup honey
Candied Sweet Potatoes:
- 3lb.sweet potatoes (about 5 medium), peeled and cut into 1/2-inch thick rounds
- 1/2c.light brown sugar
- 6tbsp.unsalted butter, melted
- 1/4c.maple syrup
- 11/2tsp.kosher salt
- 1tsp.ground cinnamon
- 1/2tsp.ground ginger
- Pinch of nutmeg
- 2tsp.bourbon (optional)
- Marshmallows
Instructions:
- Preheat oven to 400 degrees F.
- Spray 9×9 pan with non stick spray.
- Combine all ingredients into a bowl. Stir well.
- Pour into your prepared pan and baked for 20 to 25 minutes until the corn bread is a golden brown.
- Allow to cool, and then top with candied sweet potatoes. Place a marshmallow on top and use toast the marshmallow.
