Sweet Honey Corn muffins with Candied Sweet Potato Topping

Ingredients:

Candied Sweet Potatoes:

  • 3lb.sweet potatoes (about 5 medium), peeled and cut into 1/2-inch thick rounds
  • 1/2c.light brown sugar
  • 6tbsp.unsalted butter, melted
  • 1/4c.maple syrup
  • 11/2tsp.kosher salt
  • 1tsp.ground cinnamon
  • 1/2tsp.ground ginger
  • Pinch of nutmeg
  • 2tsp.bourbon (optional)
  • Marshmallows

Instructions:

  • Preheat oven to 400 degrees F.
  • Spray 9×9 pan with non stick spray.
  • Combine all ingredients into a bowl. Stir well.
  • Pour into your prepared pan and baked for 20 to 25 minutes until the corn bread is a golden brown.
  • Allow to cool, and then top with candied sweet potatoes. Place a marshmallow on top and use toast the marshmallow.
