Spinach Quiche

Ingredients:

1 pie shell

4 eggs

2 cups of light cream

1/2 cup grated swiss cheese

1 cup cooked chopped spinach--well drained and Sauteed in butter.

1/2 tsp salt

1/8 tsp nutmeg

pinch of cayenne pepper

Directions:

Preheat oven to 425 degrees. Sprinkle grated chees over bottom of pie shell. Combine eggs, cream, salt, nutmeg, and cayenne pepper in a bowl & beat to mix well. Add spinach to custard and pour into pie shell. Bake 15 min at 425 then lower the heat to 350 degrees and bake for 30 mins. more, or until knife inserted in the center comes out clean.
