Shannon’s* Candied Pecans

Makes 1 pound

Ingredients:

3 egg whites

1 tsp vanilla extract

1 cup granulated sugar

1 pound pecan halves

1/2 cup butter, melted

1 cup confectioners sugar

1 tsp cinnamon

Directions:

Beat the egg whites until soft peaks form. Add vanilla.

Gradually add in sugar.

Fold in pecan halves and mix gently.

Pour the butter on to a greased baking sheet.

Spread pecan mixture evenly on top of melted butter.

Bake at 325 degrees for 40 minutes, turning every 10 minutes.

Add one cup of 10x sugar and 1 tsp cinnamon to a gallon bag. When the nuts are done cooking, add them to the bag and shake until they are evenly coated.

Good as a snack, dessert, or in a fruit or savory salad (i.e, Apple or roasted squash)

*This recipe came from Dan McCarthy’s girlfriend who came to December 2023 birthday celebration. It was first time we were meeting her and she brought these along with her warm personality. She was a hit!
