Roast Loin of Pork with Sage and Onion Stuffing Balls

Ingredients:

3 lbs. loin pork, boned and scored--rub salt well into skin

Directions:

Loin of pork:

Cook at 375 degrees for 1.75-2 hours. Then increase heat to 400 degrees for the last 15 minutes.

Sage and onion stuffing balls:

1 1/2 oz. butter

1 cup onion, finely chopped

Saute onion and butter 3-4 mins.

Add enough stock or water to cover the onions and simmer for 15 mins. Remove from heat. Add 8 fresh sage leaves finely chopped (or 1 tsp dried); 4 oz. fresh breadcrumbs; salt and pepper. Allow to cool slightly before adding 1 egg, well beaten. Form into meatballs and place around the meat for the last 30 mins of cooking time.
