Pumpkin waffles

Ingredients

  • 1/2 cup canned pumpkin

  • 1/2 teaspoon Pumpkin Pie spice

  • Half-and-half

  • 2 tablespoons unsalted butter, melted and cooled

  • 1/2 teaspoon whiskey

  • 1 cup King Arthur Gluten Free waffle mix, and the rest of the dry ingredients listed on the box waffle recipe

    Tip

    You will be adding canned pumpkin, so hold off on the milk called for in the King Arthur recipe.

Pumpkin pie spice

If you do not have pumpkin pie spice make your own:

  • 1-1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves

Directions

  • Plug in the waffle iron
  • Mix the dry ingredients as written on the King Arthur waffle box.
  • Add 1/2 teaspoon of Pumpkin Pie spice
  • For the liquid ingredients use:
    • one large egg
    • 2 teaspoons melted butter
    • 1/2 cup canned pumpkin (pumpkin, not the pumpkin pie stuff)
    • 1/4 cup half-and-half
  • Combine the dry and wet ingredients
  • Slowly mix in more half-and-half until the mixture is thin enough
