Pineapple Cheesecake Bars

Ingredients:

Crust:

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 cup unsalted butter (1 stick softened)

Topping:

1 cup coconut

1 Tbsp butter

Filling:

8 ounces cream cheese, at room temperature

2 Tbsp sugar

2 Tbsp milk

1 tsp vanilla extract

1 large egg

1/4 cup granulated sugar

20 ounce can of crushed pineapple (drained)

1/2 teaspoon pure vanilla extract

Directions:

Preheat oven to 350 degrees F. Combine flour, sugar, and butter until mixture is crumbly. Spread evenly into a 13 by 9-inch baking pan with raised sides. Press down until an 1/8 of an inch thick and bake for 10 to 15 minutes or until edges are golden brown.

Mix cream cheese, sugar, milk, and vanilla. Add egg and mix 3 mins. Stir in crushed pineapple and mix thoroughly. Pour over partially baked crust. Mix coconut and melted butter and sprinkle over filling.

Bake for additional 15 to 20 minutes or until batter is set and coconut is golden. Remove from oven. Let stand for 1 hour and cut into bars.
