Mexican Chocolate

Makes 6-8 servings

Ingredients:

4 ounces unsweetened chocolate

1/2 cup boiling water

4 cups milk, scalded

2 cups cream

6 tablespoons sugar

1/4 tsp salt

Pinch each of nutmeg and allspice

2 tsp cinnamon

2 eggs

2 tsp vanilla

Directions:

  1. Grate the chocolate into the top of a double boiler over boiling water. Add the half cup of boiling water and, when the chocolate is melted, beat with a wooden spoon until smooth.
  2. Stir in the hot milk, cream, sugar, salt, and spices. Cook one hour, beating vigorously at intervals of 10 minutes.
  3. When ready to serve, beat the eggs with the vanilla. Add a little of the hot chocolate to the eggs, then stir into the remainder of of the chocolate. Best vigorously for 3 minutes. Serve at once.

Cooks Note: The chocolate should be served in preheated cups, preferably earthenware.
