Ingredients:
4 ounces unsweetened chocolate
1/2 cup boiling water
4 cups milk, scalded
2 cups cream
6 tablespoons sugar
1/4 tsp salt
Pinch each of nutmeg and allspice
2 tsp cinnamon
2 eggs
2 tsp vanilla
Directions:
- Grate the chocolate into the top of a double boiler over boiling water. Add the half cup of boiling water and, when the chocolate is melted, beat with a wooden spoon until smooth.
- Stir in the hot milk, cream, sugar, salt, and spices. Cook one hour, beating vigorously at intervals of 10 minutes.
- When ready to serve, beat the eggs with the vanilla. Add a little of the hot chocolate to the eggs, then stir into the remainder of of the chocolate. Best vigorously for 3 minutes. Serve at once.
Cooks Note: The chocolate should be served in preheated cups, preferably earthenware.
