Mediterranean Scramble

Ingredients:

7 eggs

1/4 cup milk

2 Tbsp. ricotta

3/4 cup roasted red peppers, drained(Mezzetta Deli-Sliced, and chopped)

1 jar marinated artichoke hearts(Mezzetta, drained and chopped)

1 Tbsp. butter

2 Tbsp. sliced green onions (thinly, to garnish, optional)

Directions:

  1. In a medium bowl, whisk the eggs, milk and ricotta together. Add the roasted red peppers and artichoke hearts into the eggs and mix together.
  2. In a medium sized nonstick pan on medium heat, melt the butter, then add the egg mixture. Stir frequently with a spatula until eggs are cooked to your desired doneness; about 5 minutes.
  3. To serve, garnish with green onions.
