Ingredients:
3 medium tomatoes
1 (16-oz) can chickpeas, drained
1/3 c olive oil
1 tsp salt
1/2 tsp pepper
6 garlic cloves
4 (8-inch) flour tortillas
6 oz feta cheese, crumbled
2 tbsps thinly sliced fresh mint
1/4 tsp paprika
Directions:
- Seed & dice tomatoes; sprinkle with 1 tsp salt.
- Let stand 1 hr in a wire-mesh strainer.
- Process chickpeas & next 5 ingredients in a food processor/blender until smooth.
- Spread mixture evenly over tortillas.
- Sprinkle top with tomato, feta, mint, & paprika; roll up.
- Chill 30 mins.
- Cut each roll diagonally into 1-inch slices.
