Grilled Sweet Potato Salad With Basil Vinaigrette

Ingredients:

4 sweet potatoes, peeled and cut into 1/2-inch slices

Vegetable cooking spray

1/2 cup diced red bell pepper

1/4 cup sliced green onions in

1/4 cup chopped flat-leaf parsley

1/4 cup bottled light red wine vinegar-and-olive oil dressing

1 tablespoon chopped basil

2 teaspoons balsamic vinegar

Directions:

Coat both sides of sweet potato slices with cooking spray.

Whisk together red wine/olive oil dressing, basil, and balsamic vinegar

Grill potatoes, covered with grill lid, over medium-high heat (350 to 400) 6 minutes on each side or until tender. Cool slightly, and cut into 1-inch cubes. Combine potatoes, bell pepper, onions, and parsley in a large bowl; toss with Basil Vinaigrette.
