Ingredients:
- 2 1/4 cups All-Purpose Gluten Free Flour
- 1 1/4 cups Sugar
- 2 1/2 teaspoons Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1/2 cup Butter, Softened
- 1 1/4 cups Banana
- 1/4 cup sour cream
- 2 Eggs, Beaten
- 1/2 teaspoons Pure Vanilla Extract
- 1 teaspoon coconut Extract
- 1/4 cup Sweetened Shredded Coconut
Directions:
Preheat oven to 375 degrees. Cream softened butter and sugar. Add eggs one at a time. Add banana, sour cream, and extracts and mix briefly. Slowly add in flour in small installments. Pour into paper-lined muffin cups. Sprinkle with toasted coconut (and nuts if desired. Bake for approximately 30-40 mins, until top springs back when touched and golden brown. Serve warm or cooled.
