Gluten-Free Buttermilk Pancakes

Makes ~ 5-6 medium to large pancakes

Ingredients:

1 cup King Arthur GF baking mix

1 Tablespoon sugar

2 Tablespoons melted butter, cooled

1 Large egg, beaten

1 1/2 cups buttermilk

Directions:

Mix dry ingredients. Whisk wet ingredients separately and then add to dry ingredients just until incorporated. Spread out thin, add any fruit or granola toppings if you wish. Cook until the bubbles at the edge pop, flip and repeat.
