Fresh Spinach Linguine

Ingredients

3/4 lb. fresh spinach linguine

1 Tbsp sesame oil

2 Tbsp coarsely chopped fresh cilantro

1/2 lb. fresh mushrooms, thin sliced

Juice from 1 lemon

1/3 lb. fresh snow peas

1-2 tsp peanut or veg. oil

1 red bell pepper

2-2 1/2 cups shredded cooked chicken

1/3 cup cashews

1/3 cup oriental sesame dressing

1 Tbsp toasted sesame seeds

Cook pasta in boiling water till al dente. Rinse in cold water and drain. Transfer to a serving platter and toss with the sesame oil and cilantro. Soak the mushrooms in lemon juice for 5-10 mins to preserve their color. Drain and discard their juice. Cut off th ends and strings from the snow peas. In a saute pan, heat the oil. Add the snow peas and saute over high heat for 1 minute, or until translucent. Drain the snow peas on a paper towel. Julienne slice the bell pepper. Add the chicken, vegetables, and cashews to pasta. Sprinkle the salad with drssing, garnish with toasted sesame seeds.

Toast Sesame Seeds: Place in dry skillet over high heat and stir constantly until golden brown, about 1-2 mins.

Oriental Sesame Dressing:

2 Tbsp rice wine vinegar

1 Tbsp dry sherry

1 Tbsp soy sauce

1 tsp sugar

1 Tbsp sesame oil--add slowly

1 tsp sesame seeds
