Ingredients:�
4lbs Yukon gold potatoes
1/2 cup diced celery and/or celery seed
1/2 cup fresh parsley
1/3 cup finely chopped green onions
3 hard boiled eggs
Vinegar to taste
1 cup mayonnaise
1/2 cup sour cream
3 Tbsp chopped fresh tarragon
2 garlic cloves
1 Tbsp Dijon mustard (or more to taste)
Salt and pepper to taste
Directions:�
Cook potatoes whole for 30-40 mins. Until tender, drain, cool. Cut potatoes into 1 inch cubes. While still slightly warm sprinkle vinegar on cubed potatoes. Chop eggs finely. Stir the rest of the ingredients together and mix with potatoes. Add salt and pepper to taste. Garnish with paprika and pepper.�
