Ingredients:
Burgers:
3 medium eggplants
3/4 cup cheddar cheese
1/2 cup bread crumbs
1/4 cup green onions
2 Tbsp parsley
2 cloves minced garlic
black pepper
Toppings:
Caramelized onions
Roasted red peppers
Spicy hot brown mustard
Baby greens
Zucchini pickles*see recipe
Directions:
Peel and cube eggplant. Sautee until soft. Mix eggplant with cheddar cheese, bread crumbs, green onion, parsley, minced garlic, and pepper. Form patties about 3/4 inch thick. Sear on hot flat grill. Top with caramelized onions, roasted red peppers, spicy mustard, baby greens, and serve on an artisan roll with zucchini pickles.�
