Cherry Walnut Cake (Torta di college e noci)

Ingredients:

2 eggs, lightly beaten

1 cup sugar

1 tsp vanilla extract

1 cup all purpose flour

1 tsp baking powder

1/2 tsp salt

3/4 cup chopped walnuts

2 cups pitted cherries

Directions:

Preheat oven to 350 degrees. Butter a 9” round springform pan and line the bottom with parchment paper.

Combine the eggs, sugar, and vanilla extract in a large bowl and beat until light. Sift the flour, baking powder and salt into another bowl and stir in walnuts. Fold the flour mixture into the egg mixture, then fold in the cherries.

Pour the batter into the prepared cake pan, level the top and bake 1 hour and 20 minutes or until skewer comes out clean, and top is golden. Remove to a wire rack to cool. To serve cut into wedges.
