Australian-Style Potato Salad

Serves 6

Ingredients:

1 kg red potatoes, whole baby potatoes or chopped into bite-sized chunks

150 grams bacon, chopped

4 eggs

1 red onion, thinly sliced

For the homemade dressing:

¾ cup whole-egg, full-fat mayonnaise

⅓ cup sour cream

1 tablespoon Dijon mustard

2 teaspoons white wine vinegar

2-3 tablespoons fresh dill, chopped

2-3 tablespoons fresh parsley, chopped

2-3 tablespoons fresh chives, chopped

¼ teaspoon salt

¼ teaspoon ground black pepper

¼ teaspoon garlic powder

¼ teaspoon mild/sweet Hungarian paprika

Directions:

To prepare the dressing: Mix all dressing ingredients in a bowl, cover, and refrigerate.

Preparation: Boil potatoes with 1 teaspoon salt until tender. Drain and cool.

Hard-boil eggs, then cool, peel, and chop. Fry bacon until crispy. Set aside.

To assemble: Combine potatoes, bacon, eggs, onion, and dressing in a large bowl. Season as desired.

Garnish with extra parsley or dill. Serve warm or chilled.
