Almond Rice

INGREDIENTS

  • 2 tablespoons  butter
  • 1/2 cup orange juice
  • 1/2 teaspoons  salt
  • 1 cups raw long grain rice, uncooked
  • 2 tablespoons brown sugar
  • 1⁄2 cup sliced natural almonds
  • 1 teaspoon minced crystallized ginger
  • 1/4 teaspoon orange rind
  • 1⁄3 cup  fresh parsley

Garnish: orange rind curls

Directions

Bring first three ingredients to a boil in a medium saucepan; gradually add rice, stirring constantly. Cover, reduce heat, and simmer 20 to 25 mins or until rice is tender and liquid is absorbed.

Melt butter and brown sugar in a small skillet over medium heat. Add almonds and ginger; cook, stirring constantly, 2 mins or until almonds are lightly browned. Add almond mixture and grated orange rind to rice, stirring gently. Garnish, if desired.
